One of the biggest changes in Emily in Paris Season 5 is that Emily Cooper is moving to Rome. She's excited to work at the new Agence Grateau office and to spend time with Marcello, the man who has stolen her heart and deeply cares about Emily.
However, that does not mean that Paris is no longer an important part of her life. Even Darren Star said that Season 5 is going to be "a tale of two cities: Rome and Paris." The creator also said:

Adding to this narrative shift is Emily’s love life, which has always been one of the show’s major emotional drivers, after years of on-again, off-again chemistry with Gabriel.
The show’s creator and Lily Collins herself have emphasized that Marcello isn’t just a fleeting interest, but a relationship that offers Emily a real chance at balance and happiness beyond the usual love triangle tropes.

Emily in Paris should continue beyond Season 5

Emily in Paris has a huge fan base, and viewers would love to see more of her stories. As seen in the trailer, Emily is expected to spend most of her time in Rome, but she also returns to Paris.
Once she's back, she can start working at Sylvie's original office and maybe consider Gabriel's feelings if her relationship with Marcello doesn't work out in the end.
